Ingredients

  • 3 gallons water
  • 3 and 3/4 cups Kosher salt

Turkey:

  • 1424 pound turkey, fresh or frozen (I used a 16# frozen for this recipe)
  • 2 Red Delicious apples, quartered
  • 1 white onion, quartered
  • 4 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon kosher salt
  • 1 teaspoon fresh ground pepper

Gravy:

  • 4 ounces of unsalted butter
  • 1/4 cup of all-purpose flour
  • 4 cups of turkey broth (from simmering the neck and giblets)
  • turkey drippings to taste
