This Buttered Herb Rice is quick, buttery, and bright with fresh herbs and capers. A simple side dish that feels elegant enough for company—ready in about 20 minutes.

Ingredients

  • 1 1/2 cups long-grain white rice (jasmine or basmati works well)
  • 3 cups chicken stock
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons capers, drained
  • Optional: 1 teaspoon lemon zest for brightness

Instructions

  1. Rinse the rice in a fine-mesh strainer under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, bring the chicken stock to a boil.
  3. Stir in the rice, salt, and pepper. Reduce heat to low, cover, and simmer for 15–18 minutes, or until the liquid is absorbed and the rice is tender.
  4. Remove from heat and let stand, covered, for 5 minutes.
  5. Fluff the rice with a fork, then stir in the butter, capers and parsley. Add lemon zest, if using.
  6. Serve warm.
