This Dijon Mustard Vinaigrette is bright, tangy, and full of flavor—perfect for adding a zesty finish to salads, roasted vegetables, or grilled meats. Made with white wine vinegar (or lemon juice), olive oil, Dijon mustard, garlic, and finely minced shallot, it’s simple to make and far better than anything bottled. A versatile, go-to dressing you’ll reach for again and again.

Ingredients

  • 1 garlic clove (minced)
  • 1 tablespoon shallot, fine minced
  • 1/4 cup white wine vinegar (or lemon juice)
  • 2 tablespoons Dijon mustard
  • 2 teaspoons water
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil

Instructions

  1. Mince the garlic and shallot.
  2. In a small mixing bowl, combine the white wine vinegar, Dijon mustard, minced shallot, and minced garlic.  Add the water, kosher salt, and freshly ground black pepper. Give it a quick whisk to bring everything together.
  3. Slowly drizzle in the Olive oil while whisking continuously.
  4. Taste and adjust seasonings as necessary.
