  • 8 medium Granny Smith apples – peeled, cored, and sliced

  • 1 tablespoon fresh lemon juice

  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon tapioca starch (or substitute cornstarch)
  • Pinch of kosher salt

For the Crisp Topping:

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup brown sugar – lightly packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 cup (1 stick) cold unsalted butter – diced

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter a 9×13-inch baking dish or similar.
  2. Make the filling: In a large mixing bowl, toss the sliced apples, sugar, lemon juice, vanilla, cinnamon, nutmeg, tapioca starch, and a pinch of salt until everything is evenly coated. Pour the mixture into your prepared baking dish.
  3. Make the topping: In another bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Add the cold diced butter and use your fingertips or a pastry blender to work it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Top the apples: Sprinkle the crisp topping evenly over the apple mixture.
  5. Bake, covered with foil, for the first 20 minutes to prevent over-browning. Remove the foil and continue baking for an additional 30–35 minutes, or until the topping is golden brown and the filling is bubbling.
