Ingredients

  • Red Wine Vinegar and Dijon Mustard: Work together to give the dressing a bright, tangy flavor.
  • Honey
  • Fresh Garlic: Either push the garlic through a garlic press or finely mince and then mash with the side of your knife. However, if the taste of fresh raw garlic is too strong for your liking, you may substitute ¼ to ½ teaspoon of garlic powder instead.
  • Dried Basil, Oregano, and Parsley: The oregano is the key ingredient. As a variation, try omitting the basil or parsley for a subtle difference in taste. Typically, make this dressing with dried seasonings; however, if you’d like to substitute fresh herbs, use three times the amount—for example, 1 tablespoon fresh oregano in place of 1 teaspoon dried.
  • Kosher Salt and Fresh Ground Pepper
  • Red Pepper Flakes: While optional, you should know it’s the secret ingredient that takes this dressing over the top.

How to make Greek Dressing

Mix all the ingredients together!  Does it get any easier than that?  You can use a whisk, a shaker jar, an immersion blender, or even a regular blender.  The blenders aren’t really necessary though as the ingredients will separate after standing for a short while.  Simply mix them back together before service.

Storage

Because of the infusion of fresh garlic, this Greek Salad Dressing deserves a spot in the refrigerator. Yet, because of its olive oil content, it may tend to solidify a bit when kept in the cold. So, be sure to retrieve the dressing from the fridge and let it reach room temperature before your intended use.

Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 2 cloves garlic, finely minced
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon each of dried oregano, parsley, and basil
  • 1/4 teaspoon kosher salt to taste
  • 1/4 teaspoon black pepper to taste

Instructions

  1. Add all of the ingredients, except the olive oil to a large bowl and whisk together.
  2. Slowly add the olive oil and whisk vigorously while pouring until the dressing is emulsified (you can shake in a sealed container or use an immersion blender in place of whisking).
