Forget the soggy tortilla bowl. This reimagined taco salad is layered with warm black beans, homemade Mexican rice, grilled skirt steak, crisp iceberg lettuce, fresh toppings, and homemade tortilla strips that stay crunchy until the last bite.

I like taco salad. I’ve just never liked soggy tortilla bowls.

It starts out crisp, but by the time you’re halfway through the meal, that crunchy shell has softened, the texture is gone, and the last few bites never seem as good as the first.

There had to be a better way.

Instead of building this taco salad inside a tortilla bowl, I build it in layers. Warm black beans, homemade Mexican rice, grilled steak, crisp lettuce, fresh toppings, and finally, homemade tortilla strips scattered over the top just before serving. Every layer has a purpose, every bite stays balanced, and the tortilla strips stay crisp from the first bite to the last.

Sometimes making ordinary food better than ordinary isn’t about adding more ingredients. It’s simply about putting them together in a better way.

How to Make Reimagined Taco Salad

  • Mix the Lime Crema – Finely mince the garlic and chop the cilantro. In a small bowl, combine the sour cream, juice of 1 fresh lime, garlic, cilantro, and salt. Stir until smooth, cover, and refrigerate until ready to serve.

Season with the salt and cumin, bring to a boil, reduce the heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is tender and the liquid has been absorbed.

Storage

This taco salad is at its best when it’s assembled and served immediately. The warm ingredients stay warm, the fresh vegetables remain crisp, and the homemade tortilla strips deliver the crunch that makes this recipe different.

If you’d like to prepare it ahead of time, store the components separately. Refrigerate the grilled skirt steak, Mexican rice, seasoned beans, lime crema, and prepared toppings in separate airtight containers for up to 3 days. Fry the tortilla strips ahead if you’d like, but store them in an airtight container at room temperature to help preserve their crispness.

The cooked skirt steak, Mexican rice, and seasoned beans can also be frozen separately for up to 3 months. Thaw overnight in the refrigerator and reheat before assembling the salad. For the best texture, prepare the fresh vegetables, avocado, lime crema, and tortilla strips just before serving.

Instructions

  3. Heat 1 tablespoon of oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and cook for 30 seconds. Add the tomato paste and cook for 1 to 2 minutes until it darkens slightly. Stir in the rice, then add the chicken stock, cumin, and salt. Bring to a boil, reduce to low, cover, and simmer until the rice is tender and the liquid has been absorbed.
  4. While the rice cooks, whisk together the olive oil, lime juice, grated garlic, salt, and pepper. Coat the skirt steak evenly and let marinate for 20 to 30 minutes.
  5. Thinly shred the iceberg lettuce, halve the tomatoes, roast and slice the jalapeños into thin strips, crumble the queso fresco, and shred the Monterey Jack.
