I like taco salad. I’ve just never liked soggy tortilla bowls.
It starts out crisp, but by the time you’re halfway through the meal, that crunchy shell has softened, the texture is gone, and the last few bites never seem as good as the first.

Instead of building this taco salad inside a tortilla bowl, I build it in layers. Warm black beans, homemade Mexican rice, grilled steak, crisp lettuce, fresh toppings, and finally, homemade tortilla strips scattered over the top just before serving. Every layer has a purpose, every bite stays balanced, and the tortilla strips stay crisp from the first bite to the last.

- Skirt Steak – I prefer thin-cut skirt steak for this recipe because it develops an excellent char over very high heat while remaining tender and juicy. If you can’t find skirt steak, flank steak makes a good substitute.

How to Make Reimagined Taco Salad
- Mix the Lime Crema – Finely mince the garlic and chop the cilantro. In a small bowl, combine the sour cream, juice of 1 fresh lime, garlic, cilantro, and salt. Stir until smooth, cover, and refrigerate until ready to serve.

- Fry the Tortilla Strips – Stack the corn tortillas, two at a time, and cut them into ¼-inch strips. Heat about 1 inch of oil in a heavy skillet, saucepan or Dutch oven to 350°F. Fry the tortilla strips in small batches until lightly golden and crisp, about 1 to 2 minutes. Transfer to a paper towel-lined plate and season immediately with kosher salt. Set aside.

- Start the Mexican Rice – Finely dice the onion and mince the garlic. Heat the oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 4 to 5 minutes. Stir in the garlic and cook for 30 seconds. Add the tomato paste and cook for 1 minute, stirring constantly. Stir in the rice until well coated, then pour in the chicken stock. Season with the salt and cumin, bring to a boil, reduce the heat to low, cover, and simmer for 18 to 20 minutes, or until the rice is tender and the liquid has been absorbed.



- Marinate the Skirt Steak – Grate or finely mince the garlic and combine it with the olive oil, juice of 1 fresh lime, kosher salt, and black pepper. Coat the skirt steak evenly with the marinade and let it rest while you prepare the remaining ingredients.

- Roast the Jalapeños – Place the jalapeños in an oven-safe skillet and roast at 400°F for about 15-20 minutes, until blistered and lightly charred on all sides. Transfer to a plate to cool slightly, then remove the stems and slice to serve.

- Prepare the Salad Ingredients – Thinly slice the iceberg lettuce, halve the cherry tomatoes, cut the avocado into bite-sized chunks, and shred the Monterey Jack. Set aside until ready to assemble.
- Season the Beans – Combine the refried beans and black beans in a small saucepan over medium-low heat. Stir in the cumin, garlic powder, kosher salt, and black pepper. If needed, add a splash of water or chicken stock until the beans are smooth and spreadable. Keep warm over low heat.
- Grill the Skirt Steak – Preheat your grill to very high heat. Grill the skirt steak for 2 to 3 minutes per side, or until well charred and cooked to your preferred doneness. Transfer to a cutting board and let rest for 5 minutes before slicing against the grain into bite-sized pieces.

- Assemble the Taco Salads – Divide the seasoned beans among four serving bowls. Layer the Mexican rice over the beans, followed by the grilled skirt steak, lettuce, cherry tomatoes, avocado, and Monterey Jack. Finish each salad with a generous dollop of lime crema.




- Serve – Add the tortilla strips and jalapeños. Serve immediately while the steak and rice are still warm and the tortilla strips are crisp. Serve restaurant-style salsa alongside the salad for anyone who would like an extra burst of fresh tomato flavor.

Storage
This taco salad is at its best when it’s assembled and served immediately. The warm ingredients stay warm, the fresh vegetables remain crisp, and the homemade tortilla strips deliver the crunch that makes this recipe different.
If you’d like to prepare it ahead of time, store the components separately. Refrigerate the grilled skirt steak, Mexican rice, seasoned beans, lime crema, and prepared toppings in separate airtight containers for up to 3 days. Fry the tortilla strips ahead if you’d like, but store them in an airtight container at room temperature to help preserve their crispness.
The cooked skirt steak, Mexican rice, and seasoned beans can also be frozen separately for up to 3 months. Thaw overnight in the refrigerator and reheat before assembling the salad. For the best texture, prepare the fresh vegetables, avocado, lime crema, and tortilla strips just before serving.

Instructions

- Combine the refried beans, black beans, cumin, garlic powder, black pepper, and a splash of water or chicken stock in a saucepan over medium-low heat. Stir occasionally until heated through. Taste and adjust the seasoning with salt if needed.
- Prepare your grill for direct cooking over very high heat. Grill the skirt steak for 2 to 4 minutes per side, depending on thickness, until nicely charred and cooked to your preferred doneness. Rest for 5 minutes, then slice with the grain into manageable strips, then cut across the grain into bite-sized pieces.
