This easy sheet pan dinner takes just minutes to prepare and about 25 minutes in the oven—perfect for game day or any night when you want a satisfying dinner without much fuss.

  • 2 (14-ounce) smoked kielbasa links, sliced about 1/2 inch thick
  • 2 1/2 pounds Yukon Gold potatoes (about 6-8 medium), cut into 1-inch pieces
  • 2 large Vidalia onions, cut into roughly 2-inch pieces
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley

Instructions

  1. Preheat the oven. Preheat to 425°F. Line a large rimmed baking sheet with parchment paper.
  2. Prepare the ingredients. Slice the kielbasa into ½-inch rounds. Cut the unpeeled Yukon Gold potatoes into approximately 1-inch pieces and the Vidalia onions into 2-inch chunks.
  3. Season everything. Place the kielbasa, potatoes, and onions in a large mixing bowl. Add the olive oil, garlic powder, kosher salt, black pepper, dried basil, and dried parsley. Toss until everything is evenly coated.
  4. Arrange on the baking sheet. Spread the mixture in a single, even layer on the prepared baking sheet. Use a second baking sheet if necessary to avoid overcrowding.
  5. Roast until golden. Bake for approximately 25 minutes, or until the potatoes are fork-tender and golden around the edges, the onions have softened, and the kielbasa is lightly browned.
  6. Serve. Transfer to plates and serve hot with stone-ground mustard and ketchup on the side.
