It takes just a few minutes to get everything onto the pan, and about 25 minutes later, dinner is ready without anyone missing much of the game.

There isn’t much ceremony involved. The kielbasa, potatoes, and onions roast together until the potatoes brown and crisp at the edges, the onions turn sweet, and the kielbasa gets a little color of its own.

Around here, we usually pile it onto paper plates with spicy brown mustard and ketchup on the side. It’s simple, filling, and exactly the kind of dinner we want when nobody wants anything formal.

Ingredients for Sheet Pan Kielbasa Bake

  • Kielbasa: Smoked kielbasa brings plenty of flavor on its own and browns nicely in the oven. Cut it into roughly ½-inch slices.
  • Yukon Gold potatoes: Their creamy interior contrasts nicely with the browned, slightly crisp edges. You’ll need about 2½ pounds, or roughly 6–8 medium potatoes, cut into 1-inch pieces. There’s no need to peel them.
  • Vidalia onions: I choose Vidalias for their mild sweetness, which improves as they roast and brown at the edges. If Vidalias aren’t available, use your preferred onion. Keep the pieces fairly large—about 1-2 inches—so they don’t cook away before the potatoes are done.
  • Olive oil: Just enough to coat everything lightly and encourage browning.
  • Seasonings: Garlic powder, dried basil, dried parsley, kosher salt, and black pepper. Nothing complicated—the kielbasa and roasted onions are doing most of the flavor work.
  • For serving: Spicy brown or stone-ground mustard and ketchup. Optional in the technical sense, perhaps. Around our house, not so much.

How to Make Sheet Pan Kielbasa Bake

Not every dinner needs a long ingredient list or an afternoon in the kitchen. Sometimes the best thing you can do is keep it simple, focus on a few small details, and let the oven do the work. That’s especially true when there’s a game on.

A little chopping, a quick toss with olive oil and seasonings, and about 25 minutes in the oven. That’s really all there is to it.

1. Cut the Kielbasa and Vegetables

Slice the kielbasa into ½-inch rounds, cut the Yukon Gold potatoes into roughly 1-inch pieces, and cut the onions into large, 1-2-inch pieces. There’s no need to peel the potatoes.

2. Season and Spread on the Pan

Place everything in a large bowl, add the olive oil and seasonings, and toss until evenly coated. Spread everything in a single layer on a parchment-lined sheet pan, leaving enough room for the potatoes and kielbasa to brown rather than steam.

3. Roast Until Browned

Roast in a preheated 425°F oven for about 25 minutes, or until the potatoes are tender with browned edges, the onions have softened and caramelized, and the kielbasa has developed some color.

Storing and Reheating

  • Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3–4 days. The kielbasa, potatoes, and onions hold up well, making this an easy dinner to enjoy again later in the week.
  • Freezer: You can freeze leftovers in an airtight, freezer-safe container for up to 2 months, though the potatoes may soften or become slightly grainy after thawing, and the onions may lose some texture. For best results, refrigerate instead.
  • Reheating: Spread leftovers on a sheet pan and warm in a 375°F oven until heated through, about 10–15 minutes. An air fryer also works well for smaller portions and helps restore some of the browned edges. A microwave works in a pinch, but the potatoes won’t retain their crisp edges.
